All Things Nice and Pullman New Delhi Aerocity celebrate Modern French cuisine with Michelin Star Chef Nicolas Durif

New Delhi, 29th February 2020: All Things Nice, in association with Pullman New Delhi Aerocity, presents an evening with Michelin Star Chef Nicolas Durif at Pluck as he teams up with Delhi’s star Chef Neeraj Tyagi (Director of Culinary, Pullman & Novotel New Delhi Aerocity). In 2007, Chef Nicolas Durif was awarded the title ‘Young Talent of Poitou Charentes’ by the Gault & Millau Guide. In December 2017- he received another distinction from the Gault & Millau guide the Trophy of ‘Best Hope in the South-West of France’ and in 2018, he was awarded his first Michelin Star. The exceptionally talented Chef is on a two-city tour of India with All Things Nice to host a dinner in Bangalore and Delhi this February/ March.

These exquisite dinners will be paired with Grover Soirée Brut from Grover Vineyards, Senorita Angel Sauvignon Blanc, Just Roberto Pinot Grigio, Senorita Angel Chardonnay, Camas Pinot Noir, Camas Cabernet Sauvignon from Rad Elan and Remy Martin VSOP from Remy Cointreau by Sommelier Nikhil Agarwal, CEO -All Things Nice.

About Chef Nicolas Durif – 

Born in Alsace, his passion for cooking comes from his grandmother. From an early age, he demonstrates his talents at the service of renowned institutions in Strasbourg. He worked at the George V in Paris and after a passage in the South of France, where he drew a part of his inspiration for his cuisine, he settles in Charente-Maritime and adopts the local and sea products. After working under Christopher Coutanceau (2 Michelin Star Chef), he opened his restaurant L’Hysope in 2015. Alsace remains present in his cuisine, particularly with the spices and herbs, including hyssop an aromatic plant that sublimates his dishes and the name he chose for this restaurant. Chef Nicolas Durif was awarded the Gault & Millau in 2017 with the Nouvelle Aquitaine Hope Trophy. He won his first Michelin Star in 2018.

Sommelier Nikhil Agarwal of All Things Nice on bringing Chef Nicolas Durif to India: “We are particularly excited about bringing Chef Nicolas Durif to India, our third French Michelin Star Chef. His menu for the dinners is  very different from anything that we have put together in the past and we are sure that our guests will simply love it.”

Amuse-bouche: Cream of cauliflower and sea lettuce with coconut milk, lentil salad with Calamansi (V)

Senorita Angel Sauvignon Blanc, Central Valley, Chile

First: Crunchy vegetable brick and avocado mousseline with banana, condiment and chickpea hummus with black currant (V)

Just Roberto Pinot Grigio, Veneto, Italy

Second: Slightly poached Oyster, Carrot and Leek Matignon, dry fruit fudge and ‘Medley’ emulsion with hibiscus Or

Black olive Pissaladière (Provencal open tart), broth of caramelised onions with burnt bread (V)

Senorita Angel Chardonnay, Central Valley, Chile

Third: Duck filet with absinthe mustard, aubergines with smoked paprika and mustard seeds, reduction of balsamic vinegar with soy Or

Crunchy Sauerkraut maki, aubergines with smoked paprika                       and mustard seeds, lemongrass and cumin carrot jus (V)
