Chef Jerson Fernandes optimises his creativity in a decision to stay closer to the flame, as an Executive Chef for Accor’s most iconic property, The Novotel Mumbai Juhu Beach. The brand Accor through its culture of recognition, he states has always presented him with autonomy in the execution of his culinary skills, artistry and expertise. To place this in perspective, let’s saunter through Goa’s vibrant culture, of creativity, spirit of enthusiasm and artistry, Chef Jerson revelled in the rich diversity of the region, combining the simplicity of ingredients with the exoticness of flavours as Executive Chef of Novotel Goa Dona Sylvia Resort from May 2019 to December 2020.

The power of his intention was seen in the heart of his innovation.; ranging from The Farmer’s Markets for Sunday Brunch, Spice Trails, Farm Tour cooking, Dining With Elsa-the Goldfish, and Saltwater tours- each of which purely demonstrated his culinary initiatives beyond the Kitchen, and beyond his designation of being an Executive Chef. Amalia, the resort’s lounge lobby bar is an emblem of Chef Fernandes’s uniqueness; of introducing nutritionally-rich plant-based diet inspirations, and thus earning the recognition of being Goa’s first Vegan-friendly bar.
With over 13 years of experience, Chef Jerson is a maestro of flavours, an intuitive pioneer of gastronomic delights, and an agile artist of food plating; each of which is reinforced by his passion for sustainability and conscious food choices.
