For the love of the sea

Adding to the communal experience, while one gets to discover the collision of flavours, Chef Alexis Gielbaum has curated a five course a la carte menu dedicated to the seafood lovers, and they’re calling it – ‘For the Love of the Sea!’. It teams seasonal, responsibly sourced seafood with a seafarer’s long-held favourite, pastis. Much like in Marseille!

This special menu is the first of many to champion local producers and fine potions. Find Juniper Cured Mackerel (Green Apple, Horseradish Chantilly, Angostura, Assamese Black Rice Cracker), and  Sand Lobster Sous Vide (Vanilla & Citrus Dressing, Ricard Sauce Corail).

To further appease your seafood craving, they have the Black Clam & Green Lip Mussel (Sauce Marniere au Pastis) & the delicious Smoked Himalayan Trout Tartare (Miso Barbecue, Cape Gooseberry).

For the final course, they have the sinful Crème Brûlée a la Pastis, for a perfect ending.

Complementing the food, Nick Harrison has also introduced a special cocktail menu, devoted to pastis cocktails.
