From the hills, Assam imbibes a culture of drying and fermenting food as primary methods of preparation. While the plains have influenced it by introducing an abundance of ingredients like fish, meat & vegetables. Rice is the centre of most of their cuisine and other dishes are meant to accompany it. It is the one item that has varieties across breakfast lunch and dinner. Food is mostly not spicy and only a few indigenous spices and herbs are used to subtly flavor the food. Traditionally, food is cooked in earthenware over an open flame, giving the food a distinct flavor.

Home Chef Monjeeta Baroowa has whipped up a menu which will highlight signature dishes from the land of hills and tea.
