Charoli’s Chef Anuradha Joshi Medhora has been cooking up a storm in Mumbai, reviving the Royal Cuisine of Malwa and now it’s time to bring it together over a table, a Soul Table.

Mark your calendar, 25th of September is when Charoli’s Chef Anuradha Joshi Medhora is bringing a 7-course tasting menu that brings her journey together as a chef, at Four Seasons Mumbai. The magnificent menu enriches the understanding of the neighbouring region of Malwa while taking every guest on a culinary voyage to the times gone past.

The Non Vegetarian 7 course meal will feature royal highlights like Susa Alu and Mathri Canapés – a Charoli signature recipe of Susa Alu deconstructed on methi mathris with a creamy curd dipMurg Bagheli – a Baghelkhandi recipe from the Royal house of Rewa, served in a taco style, Bajra khichadi with Kebab Ki Kadhi – Pearl millet khichadi served with a creamy, mildly spiced smokey kadhi and melt-in-your-mouth minced mutton kebabs. End your meal on a sweet note with a traditional dessert served with a twist – Gulab ki Kheer + Ande ka Halwa – Gulab ki kheer panna cotta served with hot ande ka halwa and a balushahi crumble.

The Vegetarian 7 course menu will feature dishes like Chukunder ke Kebab – Bite sized beetroot kebabs served with a peanut crumble on a bed of spiced curd rice, Rajputi Karari Bhindi –  Crispy okra tossed in our secret spice mix served with slow cooked shallots, served like a taco. Enjoys mains like Hare Mirch Ke Alu –  The classic Malwa style spicy potato curry served with bite sized bafle and panchratna dal and end with the must try dessertGulab ki Kheer / Aate ka Halwa –  Gulab ki kheer panna cotta served with hot aate ka halwa, a balushahi crumble along with a salted cognac caramel.

Paired with this grand display of cuisine is a set of crafted cocktails as a tribute to Hennessy. What’s intriguing is the use of ingredients often found in the same land, including but not limited to spices and produce such as coriander, poppy seeds and guavas. The three cocktails pair artfully with the seven course menu.
