According to Chef Sumit Sinha, Crowne Plaza Today New Delhi Okhla, “Smoking gives an interesting flavour to the meat and the veggies. The sear at the end of the recipe also makes sure that the flavour is trapped inside the meat or the vegetable while still getting a crust on the outside!”
