Pizza Dough
Ingredients:
Bread flour: 574 g
Salt: 12 g
Yeast: 6 g
Cold Water (at 4°C): 399 g
Method:
Combine all ingredients together until evenly incorporated.
Knead dough for 6-8mins at 23°C and allow to rest for 45 mins.
Leave overnight. Divide into 125gm equal portions and shape.
Classic Pizza Sauce
Onion: 2 tbsp
Garlic: 1 tbsp
Tomatoes (blanched, de-skinned, de-seeded, chopped): 200 g
Basil leaves: 2-3 nos
Olive oil: 1 tbsp
Salt & pepper: As needed
Water (more or less, as required): 100 ml
In a pan, heat oil. Sautee your onion & garlic together. Make sure you don’t brown them.
Add the chopped tomatoes. Stir well.
Once combined, add 100 ml water & salt. Let it reduce till half of the chunks are mushy.
Once it matches the right consistency, add basil leaves and pepper.
Pizza Napolitano Margarita
Pizza sauce: As needed
Mozzarella: 200 g
Basil: 2-3 leaves
Bell pepper (roasted & sliced): 150 g
Onion (diced): 100 g
Corn: 30 g
Jalapenos: As needed
Roll out your pizza dough. Make sure you spread the pizza sauce evenly on it.
Spread all the toppings evenly. Crumble the mozzarella on top. Tear & add the basil.
Bake it at 200C for 8-10 mins. Slice & serve hot!
