Recipe: SALTED CHOCOLATE SORBET

Ingredients Required for SALTED CHOCOLATE SORBET :

· 1145 g of water

· 100 g sugar

· 514 g of 60% couverture chocolate

· 230 g dextrose

· 10 g ice cream stabilizer

· 10 g salt

Total weight: 2041 g

Moisturize the stabilizers with 300 g of water in the microwave for 5 minutes at 800 watts. Melt the chocolate, put all the ingredients in the pasteurizer or pan. Add the hydrated stabilizers, mix. Bring to 65°C, mix again and blend directly. In order to further enhance the flavour, feel free to add some red peppercorns.

Salad :

· mâche

·spinach shoots

· rocket

· 4 orange segments

· pine nuts

· almond crisp

· quenelle cocoa sorbet

Vinaigrette :

· 100 g olive oil

· 30 g orange juice

· 5 g balsamic vinegar

· 2 g salt

· 5 red peppercorns
