The Nordic Novelty By Chef Sander Nikolajev At Tamra Shangri-Las-Eros Hotel New Delhi

Tamra, the award-winning, multi-cuisine dining restaurant at Shangri-La’s – Eros Hotel, New Delhi brings to its patrons ‘THE NORDIC NOVELTY’ an authentic Nordic cuisine affair. The “Nordisk Mad” or frequently know as Nordic food has evolved over the years and has taken the food industry by a storm.

For the first time ever, Chef Sander Nikolajev will be coming to New Delhi to enchant the patrons with historic Nordic cuisine.  His cooking technique combines both old and new Nordic styles of cooking. Former head chef at Aparaat in Tartu (Estonia), Chef Sander Nikolajev comes with 10 years of culinary experience. His passion lies in vegan cuisine and playing with flavours and ingredients. With specialization in Nordic Food, Chef Nikolajev is fond of learning different cuisines and wishes to explore Asian cooking.

Nordic cuisine internationally, is a celebration of food, taste and variation. It’s all about experimenting with ingredients sourced locally from the dairies and farms, combined together in chorus to create regional dishes. The cuisine is also familiar for its healthful feature and is mainly known for prevention of chronic diseases and improvement in metabolic markers.

The very famous Tamra buffet spread will have a Nordic cuisine theatre showcasing Chef Sanders signature dishes such as Honey Balsamic Glazed Duck, Burnt Goat Cheese Salad with Hazelnuts in Salted Caramel, White Bean Crème Soup, Rosemary Sour Cream, Roasted Seeds, Beetroot Infused Salmon Gravlax, Lentil Beetroot Cutlet, Jerusalem Artichoke – Parsnip Puree, Roasted Carrots and Apple Wine Sauce, Beetroot Cabbage Soup with Poached Eggs, Herring with Pickled Onions and Shaved Cucumber on Roasted Bread Topped with Cream Cheese, Quiche with Trout and Fennel Confit, Swedish Meatballs with Cabbage Butter Cream, Caramelized Onions and Whiskey Pepper Sauce, Salmon Patties with Cauliflower Puree and Roasted Carrots, Duck Confit with Roasted Leek and Sweet Potato-Apple Sauce, Grandmother’s Rhubarb Cake, Rye and Cranberry Mousse with Milk, Swedish Kladdkaka – Chocolate Cake, Cinnamon and Peanut Butter Truffles.

Tamra once again is embarking on a journey to take your culinary experience to another level with its exciting “world on your platter” concept.
