Awadhi Cuisine is a native cuisine to the city of Nawabs  Lucknow, which is capital of the state Uttar Pradesh. This cuisine was greatly influenced by Mughal cooking techniques and the cuisine of Lucknow bears similarities to those of Central Asia, Kashmir, Punjab and Hyderabad. 

The chefs of Awadh invented the unique ‘Dum’ style of cooking which infuses the food with the flavours from the ingredients. It also traps moisture inside the cooking pot making the dish tender and delicious.
