Hospitality Lexis had a conversation with Pastry Chef Bhavika Rawlyani of R S Cakes and Chocolates to know about the latest trends in Wedding Cakes

There’s no better way to show off you and your fiancés’ creative sides than a unique wedding cake. Theme based designs are taking upfront from the regular or traditional patterns, designs. Nowadays, the couples opt for pastel hues and shades and prefer the entire set up designed to the attire or outfit they would be wearing. Couples have become very specific about the theme & designs for the cake on a special occasion. Even the flavours are also specific, and each layer flows through the other with the rhythm to match and ambience.

The cakes could be decorated with fresh flowers or a gold sequin draped in fondant and finished with fresh flowers with accordance to the theme selected. The choice and themes are endless with techniques like airbrushing, foliage, edible lace designs, ruffles, sugar flowers. As the design flows through the cake in the same way, flavour variations are much more than the traditional vanilla. There are combinations of flavours like red velvet with cream cheese, a balance of sweet and tangy flavours, a very traditional black forest cake, chocolate sponge with cherry liqueur and cream and Traditional plum cake with marzipan these are some preferred flavours. However, there are some exclusive fusion combinations like a Chocolate truffle with almond praline, apple cinnamon with salted caramel, confetti cakes White chocolate with blueberry filling and also a combination of flavours is preferred to run through the various tiers of the cake.
